Breakfast in a Cup: Banana Coffee Smoothie

Sometimes you wake up, feeling too lazy to cook breakfast but unwilling to settle for a shabby meal? Try this banana-coffee smoothie recipe instead. It’s easy, quick, fresh, nutrition-packed, and still delivers an adequate dosage of caffeine to help you start off a productive day. 

This recipe is adapted from Emily Vikre (a.k.a fiveandspice) on Food52.

INGREDIENTS

  • 1-2 bananas (either fresh or frozen)

  • 3/4 cup of plant-based milk (oat and soy if you like the creamy taste)

  • 2-4oz of strong brewed coffee

  • 1 cup of Greek or European style yogurt

  • 1 scoop of vanilla protein powder

  • 1 tbsp of cacao powder

  • 1 tbsp of honey or maple syrup

INSTRUCTIONS

  1. For the coffee, check out our guides on how to brew coffee with a phin and a Moka pot. You can also substitute with an espresso shot or one cup of cold brew concentrate. 

  2. Mix everything together with some ice in a blender at high speed. 

  3. Garnish with cacao nibs and coconut flakes (optional).
